Fast somewhat healthy lunch

In an effort to save some money and lose weight, I've starting preparing my own lunches a couple of times a week instead of grabbing lunch out after class. One of my favorite restaurant lunch dishes are paninis, which are really easy to make at home! I also found a way to save calories in the side dishes by giving myself a smaller serving of potato chips and adding a side of fresh veggies.


As you can see this lunch consisted of a turkey panini, potato chips, a pickle and celery with 1 tablespoon of light ranch dressing. I also made an iced coffee with the coffee leftover from this morning.
Turkey Panini:
1-2 slices deli turkey
1 slice Swiss cheese (I used light Swiss)
Mustard
2 slices bread
Sprouts (or other veggies)
Preheat a tabletop grill (like a George Foreman). Assemble sandwich and spray grill with cooking spray. Place sandwich on grill and allow to cook until golden brown and the cheese melts.
Serve with chips, sliced veggies and a pickle
Iced Coffee (a great use of a cocktail shaker)
Leftover cold coffee
Milk
Sugar or Splenda
Ice
Place ice in a glass. In a cocktail shaker combine the milk, coffee and sugar. Shake well and pour in the class.

It does save a ton of money and I feel like its healthier!
